Chicken salad with cranberries and pecans, spring mix and tomato on croissant. Canned chicken (or rotisserie or cooked) Mix the walnuts, cranberries, mustard, sugar, celery, scallions and some salt and pepper together in a large bowl.This is my first time making chicken salad with strawberries and I loved it! What you need for my Strawberry Chicken Salad Croissants 1 cup chicken (cooked and cubed) 12 green onions (thinly sliced) 1/4 cup cranberries (chopped) 3 tablespoons creamy Caesar dressing 1 tablespoon honey. I love different chicken salads like my Cranberry Chicken Salad Spinach Wraps and my Cherry Chicken Pasta Salad. I made these Strawberry Chicken Salad Croissants to take to to work for the week and loved them! These chicken salad sandwiches are cold so perfect to take to the beach, a day at the park, or when you are out relaxing by the pool on hot Summer days.
